    Potassium Sorbate, also known as a ‘wine stabilizer’, inhibits the growth of molds and yeasts. This may be necessary in some wines to prevent continued fermentation in the bottle. The effects can also be enhanced with the use of sodium or potassium metabisulfite. Potassium sorbate can be useful in natural wines or ciders in which wild yeast or bacteria may ferment unpredictably.
